Green Teas
Typically, the best green teas are made from the young leaves, which are withered (wilted in a controlled manner), fixed (where oxidation is halted), and dried. The methods of achieving these steps can vary greatly between styles, but the goal in each is to preserve the natural fresh taste of the plant. By preventing oxidation from progressing past an early stage, the polyphenols in the leaves are left intact, along with the color of the leaves and buds themselves.
