Picked according to the same exacting standards as our non-roasted Tie Guan Yin, this one is oxidized to 20%, and at the final stage of processing, roasted for nearly a full day to give it a rich toasted flavor with a fainter floral aspect. Tea made by his traditional style of TGY processing is sometimes also called thoroughly baked.
