Fuding Shou Mei Aged White Tea Cake

This Shou Mei is a white tea from Fuding which is made from the same varietal as Bai Mu Dan (White Peony), and Silver Needle, but the picking standard is different, with more leaves harvested per branch.

This Shou Mei was harvested in 2013, aged in Fuding for two years, in Kumming for three years, then pressed into a cake in 2018. It has a wonderfully rich multi-layered sweetness with woodsy overtones, and the tea soup feels quite thick, almost syrupy in the mouth, with no astringency.

We recommend a brewing temperature of 190f, but you may also enjoy using higher temperatures, especially in later infusions.

Each cake weighs 100g, or about 3.5 ounces.
