Grown in the Huang Shan region of Anhui province at 650 meters above sea level amid dense forests in mineral-rich soil, this Mao Feng is a classic Chinese green tea, full of flavor and complexity.
The leaves are lightly rolled after first being withered and pan fried; after rolling it is lightly roasted over charcoal twice, with an annealing period between.
The taste is at once clean, earthy, mildly sweet, and vegetal, with a predominating mellow character.
We recommend brewing this tea at about 165-175f for the first steep, maybe slightly increasing the temperature in subsequent steeps. It is highly infuseable, yielding about 4 good steeps if they are kept on the short side.
