If I could think of one word to describe this black tea, it's "classy". Something about the appearance of the thin but long leaves, and the aromas that emanate...
Anyway, this is an older style of black tea from the Yixing region of Jiangxu Province. Yixing is also a region famous for its teawares, like teapots and gaiwans made from Yixing's famed purple clay.
It is in some respects similar to tea produced in Fujian province, most notably unsmoked Lapsang Souchang. Its flavor has notes of dried fruit, malt, and cacao.
We've been having good results brewing it at 195-200f.
